I had a wonderful Mother's Day this year! I spent some time in the kitchen with my daughter, Ella and made this tasty Rhubarb Cobbler.

We also made a delicious, homemade vanilla pudding and had an absolute blast spending that time together.

I posted a recipe for Sticky Rhubarb Pudding last month, but when you live in MN and love rhubarb like I do, then you have to post about four or five different rhubarb recipes each season!

I have to say I loved this rhubarb cobbler and it will be made again at our house! I brought some to my sister, Shantel so she could taste test, and she also thought it was great.

The rhubarb portion of this dessert is tart, the cobbler topping is chewy and eggy, which Shantel and I both LOVE, and when you top it with ice cream or whipped cream, it adds the most perfect amount of sweetness which balances everything out.

I'm not much of a baker or dessert maker, unless it comes to rhubarb. I really want to try some others now that I know how great they are.

We always have fruit in the house because we are fruit fanatics, but we usually just eat them as a snack or with lunch.

I try to stay away from desserts as much as possible since starting my weight loss journey!

We joined the YMCA in January and as of today, I've lost 20 pounds! I've been working out at least 5 days a week and really love it. Here's to the next 20!



What is in Rhubarb Cobbler?

  • Rhubarb: Rhubarb is a perennial vegetable, though it is usually used as a fruit in desserts and jams. You use only the stalks of the rhubarb plant and they have a rich, tart flavor. The leaves of the rhubarb plant are poisonous, so make sure that they are not ingested. Rhubarb contains calcium, potassium and vitamin C.
  • All purpose flour: It's a combination of hard and soft wheats. Bleached flour provides a softer texture. It's versatile and you can bake most anything with it!
  • Butter: A dairy product consisting of approximately 80% butterfat and made from the fat and protein components of milk or cream. Most commonly made from cow's milk, but can also be made from sheep, goat, yak, or buffalo milk.
  • Granulated sugar: Also known as white sugar, table sugar or regular sugar. It's grainy, common and used in many types of recipes.

This recipe is ready in these steps:

  • Preheat the oven
  • In a bowl, mix rhubarb, sugar and cornstarch
  • Pour into a glass baking dish, set aside
  • In a bowl, combine flour, sugar and salt
  • Then stir in the eggs until mixture is crumbly
  • Sprinkle evenly over the rhubarb, then drizzle the melted butter over top
  • Bake, until top is lightly browned and rhubarb is hot and bubbly
  • Cool before serving

  • Dawn- I just made this and this is so good. My tip would be, use frozen rhubarb. Microwave the rhubarb until softened, and drain out the water. I used about 4 cups of frozen rhubarb.

Amazing Rhubarb Cobbler

Yield: 6 servings

Ingredients:

  • 5 cups fresh rhubarb, chopped
  • 1 3/4 cup granulated sugar, divided
  • 1 1/2 tablespoons cornstarch
  • 1 1/4 cup all purpose flour
  • 1/8 teaspoon salt
  • 2 eggs, lightly beaten
  • 1/3 cup butter, melted

Instructions:

  1. Preheat the oven to 375 degrees.
  2. In a bowl, mix rhubarb, 1 cup sugar and cornstarch until combined.
  3. Pour into a 8x11 inch glass baking dish, set aside.
  4. In a bowl, combine flour, 3/4 cup sugar and salt. Then stir in the lightly beaten eggs until mixture is crumbly.
  5. Sprinkle evenly over the rhubarb, then drizzle the melted butter over top.
  6. Bake for 40 minutes, until top is lightly browned and rhubarb is hot and bubbly. Cool before serving.
