EASY No-Bake Strawberry Mooncake Recipe – FOOD is Four Letter Word (2024)

Prep time: 50 minutes

Serves: 17 Small Mooncakes

Method

• 1)

  Add Freeze Dried Strawberries to a food processor, process until the strawberries become a powder. Sift the mixture into a bowl and discard the larger crumbs.

  Add the full box of Joe-Joe’s into the food processor and process until they become fine crumbs. Cut ¾ Cup / 6oz of Cream Cheese into cubes and add to the food processor, process until it starts to look like dough and the cream cheese is evenly distributed.

• 3)

  Get 2 Tablespoons of the dough (40g) and roll firmly into a ball and place on a baking sheet lined with parchment or silicone mat. Continue forming balls with the rest of the dough.

• 4)

  Coat a dough ball very well in the Freeze Dried Strawberries Powder, place into the mooncake mold, hold the mold firmly on your work surface, then press the mold down very firmly 3 times then lift up the mold and remove the mooncake. Repeat until you’ve made all the mooncakes – don’t worry if they look powdery when first come out the mold, it gets absorbed once they sit in the fridge for about an hour. You can store them in a sealed container in the refrigerator for up to a week, let them sit out for about 10 minutes before serving them. Enjoy!
