Chicken Pita Sandwiches
Ingredients:
2 pre-cooked skinless/boneless chicken breasts
Salt and pepper to taste
1 tbsp. wine vinegar
1/2 tsp. chopped chives
1/4 cup nonfat plain yogurt
1/2 small cucumber, diced
2 pitas
Directions:
1. Cut chicken into thin slices and place in bowl, sprinkle with salt and pepper.
2. Sprinkle on vinegar and chives.
3. In a small bowl, mix together yogurt and cucumber.
4. Split the pitas, making pockets. In each pita, spread 2 tablespoons yogurt-cucumber sauce.
5. Place 1/4 of the chicken mixture into each pocket; close the pockets, wrap in plastic wrap and chill in refrigerator overnight, cut in half to serve.

Greek Pasta Salad
Ingredients:
2 oz. (about 1 cup) pasta shells
2 tablespoons Italian dressing
¼ cup feta cheese crumbles
1/8 cup sliced California olives
5 halved cherry tomatoes
leftover chicken breast, cubed (optional)
Directions:
1. Cook the pasta according to package directions.
2. Drain and rinse with cold water to cool the pasta.
3. Mix in the Italian dressing, feta cheese, chopped olives, tomatoes and chicken and put in a portable container.

Ingredients:
1 plain bagel
4 tablespoons pizza sauce
2 oz. shredded mozzarella cheese
Directions:
1. Cut bagel in half.
2. Spread pizza sauce on each half and sprinkle with cheese.
3. Add toppings and microwave for approximately one minute.

Turkey Wrap
Ingredients:
2 large flour tortillas
1/2 cup ranch dressing
2 tablespoons barbecue sauce
1/4 head iceberg lettuce, very thinly sliced
1/4 pound pepper Jack or Monterey Jack cheese, grated
1/2 ripe avocado, thinly sliced
1/2 cup pitted black olives, chopped
1/2 cup red bell peppers, chopped
1/4 pound smoked or buffalo-style turkey, thinly sliced
Handful of cherry tomatoes, quartered
Instructions:
1. Heat tortillas in the microwave for 15 seconds (to soften for rolling).
2. Make the sauce by mixing the ranch dressing and barbecue sauce in a small bowl.
3. Working with one wrap at a time, layer each ingredient on half of the tortilla. Start with a bit of sauce, then add the lettuce, tomatoes, cheese, avocado, olives, and peppers, using as much of each as you like. End with a piece of the turkey. Fold in each side of the tortilla and begin rolling the wrap from the end with the filling. Tuck in the filling as you roll.
4. Slice each sandwich in the center, and refrigerate overnight.

DIY Yogurt Parfait
Ingredients:
½ cup low-fat granola
¼ cup dried cherries
¼ cup chopped walnuts
1 vanilla yogurt container
Directions:
1. Mix the granola, dried cherries, and chopped walnuts together in a ziplock bag.
2. Pack it, along with the container of yogurt container and a spoon, in your bag.
3. When you are ready to eat it, mix the granola, cherries, and walnuts into the yogurt and enjoy!

Cucumber Sandwiches
Ingredients:
1 medium cucumber
1/2 cup cider vinegar
1 cup water
8 ounces of cream cheese
1/4 cup mayonnaise
1/4 teaspoon garlic powder
1/4 teaspoon onion salt
1 loaf sliced white bread
add Worcestershire/paprika/salt as desired
Directions:
1. Finely chop cucumber and mix into the cider vinegar and water.
2. Soften cream cheese and add enough mayonnaise to it to create a soft, fluffy spread.
3. Add onion salt, garlic powder and other seasonings as desired.
4. Spread mayo mix on bread, add cucumbers and cut into triangles.

Ingredients:
1/2 cup Fettuccine, cooked
2 tablespoons chickpeas, rinsed and drained
1 teaspoon red onion, chopped
One small handful of cherry tomatoes, halved
1 teaspoon chopped fresh parsley
Lemon juice, to taste
Black pepper, to taste
Instructions:
1. Combine the chickpeas, onion, tomatoes and parsley.
2. Season with the lemon juice and black pepper and serve with the fettuccine.

Ingredients:
½ whole grain pita
1 tablespoon cream cheese, softened
1 teaspoon Dijon mustard
1 teaspoon honey
1 piece iceberg lettuce
1 slice Monterey Jack cheese
3 thin slices turkey
5 thin apple slices
Directions:
1. Mix together the cream cheese, Dijon mustard, and honey in a small bowl.
2. Spread the honey Dijon spread inside the pita.
